The geographic areas that define a Bourgogne Pinot Noir are very large and cover more than 300 sub districts which produce very different styles of wines.  Our Bourgogne Pinot Noir comes from our vineyards in Volnay and has a district Cote de Beaune stamp.  In addition, because of the small yields in 2011,  we declassified and added wine from Marsannay and Savigny Les Beaune.

Vinification/Barrel Ageing: The grapes were hand picked in small cases from September 3-8,  passed on a sorting table, were 100% destemmed, and fermented in a stainless steel tank using the grapes’ natural yeasts.  Fermentation lasted 19 days with periodic pumping over and punch downs.  We separated the free juice from the solids, pressed the solids in our pneumatic press and then reassembled the two.  We put the wine in barrel (13% new oak) by gravity for 12 months followed by 3 months in a stainless steel tank.
 
Bottling: There was a light filtration before bottling by gravity from December 17–19, 2012.
Number of bottles produced: 11,120.   
 
Tasting Notes:  With a purple ruby robe the nose reveals small red and black fruits of strawberry, blackcurrant and blueberry.  It is concentrated, with a good structure but with smooth velvety tannins.  This is an easy to drink wine that will accompany your everyday dishes but will marry well with more elaborate fare such as roasted Guinea Hen.
