Located between Corton and Beaune, Savigny’s vineyards cover the north and south sides of the Valley of the Rhoin (small creek that begins in the hill behind bouilland). The geology is a direct result of the alluvial “cone” deposits made over many millions of years from the upper valley. In 2012 because of the minuscule yields we combined 3 different Savigny Les Beaune 1er Cru vineyards in order to make one wine: Aux Guettes, Les Lavieres, Aux Gravins.

Soil: Calcareous limestone and marls
 
Vinification/Barrel Ageing: The grapes were hand picked in small cases from September 20-23, passed on a sorting table, were 100% destemmed, and fermented in a stainless steel tank using the grapes natural yeasts. Fermentation  lasted  21 days, with periodic pumping over and punch downs. We separated the free juice from the solids, pressed the solids in our pneumatic press and then reassembled the two. We put the wine in barrel (20% new oak) by gravity for 15 months followed by 3 months in stainless steel tanks.
 
Bottling: Light filtration before bottling by gravity on February 13, 2014. Number of bottles produced: 2,810
 
Tasting Notes: The wine has a deep cherry color with a hint of purple and small red fruits and a hint of violet. On the mouth the wine reveals firm but fine tannins that give volume and roundness to the wine. It finesse and will make the wine accessible in its youth but it should age gracefully for 5-6 years. 
 
Ageing potential: 2014-2019
