Alex Gambal and his wife Diana Williams Gambal have arrived from Burgundy, France.   After a casual dinner on their first night in Salt Lake City, we enjoyed a multi-course, formal dinner at Valter’s Osteria in downtown Salt Lake City on their second evening.

Maison Alex Gambal is a relatively new domaine in the historic region of Burgundy; only twenty years.    The focus  of the domaine is on growing great grapes to create wines that are authentic to the appellation.   Sustainable viticulture is paramount.   

Organic and biodynamic viticulture techniques are used with the domaine moving towards farming all the domaines vineyard holdings to 100% organic viticulture.   Each vintage provides the team at Maison Alex Gambal an opportunity to use indigenous yeasts and natural wine-making.   All grapes are harvested by hand.  Chardonnay is whole cluster pressed in a very gentle pneumatic press.  Wines are fermented and aged in French oak barriques in the underground cellars.   Depending on the vintage and appellation, red grapes are either de-stemmed, partially de-stemmed or fully de-stemmed.  After a 10 to 14 day fermentation for red wines the must is transferred by gravity to the underground cellars and placed in barrels for extended aging.
